Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.

Fried Rice With Shrimp Paste

Ingredients
  • 120 gm white rice
  • 20 gm onion, finely chopped
  • 5 gm garlic, finely chopped
  • 10 gm shrimp paste
  • 50 gm water spinach, cut into 4 cm length
  • 2 red chillis,pound until fine
  • 2 bird’s eye chillies, pound until fine
  • 10 gm anchovies, fried
  • 50 gm chicken breast, cut into cubes
  • 1 egg
  • 2 tbsp QBB Ghee
  • Salt to taste

Instructions
  1. Heat QBB Ghee to saute chicken and stir for a while
  2. Add shallots, garlic and shrimp paste and stir until fragrant
  3. Add egg, chilies and mix well. Add salt
  4. Add in the rice and stir
  5. Add in the spinach and stir until vegetables are cooked. Sprinkle with anchovies.
