Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.

Vegetables Fritters

  • 170 g plain flour
  • 230 g water
  • 1 tsp chili giling
  • 1 large shallot, sliced
  • 1 large chili, sliced
  • 20 g beansprouts
  • 40 g cabbages, sliced
  • 4 spring onions, sliced
  • 1 tsp minced garlic
  • 1/4 tsp coriander root powder
  • 1/4 tsp cumin powder
  • pinch of salt and pepper
  • QBB Clarified Butter for frying

  1. Mix flour, water, chili giling, salt and water; combine until smooth.
  2. Add in shallot, chili, beansprouts, cabbages, spring onions, garlic, coriander powder, cumin powder, salt and pepper and combine.
  3. Heat QBB Clarified Butter in a large pot. When QBB Ghee is heated, scoop up a spoonful of the mixture and drop into the QBB Ghee for frying.
  4. Turn fire to medium heat. Do not cramp the pot by frying too many pieces at a time. Fry each batch of fritters for about 5 minutes. Place the fritters on cooling rack and serve warm.
