Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.
Recipes

Potato Chutney Pilau

Ingredients
  • 70 g ​​​Coriander leaves​patek philippe replica
  • 50 g ​​​Mint leaves
  • 2 ​​​Medium unripe mangoes, peeled and chopped
  • 4 ​​​Green chillies (more if you want it spicy)
  • 15 g ​​​Dried pomegranate seeds (or 1/2 tsp sugar)
  • 1 tsp ​​​Cumin seeds
  • 2 tsp ​​​Fennel seeds
  • 100 ml ​​Water
  • 1 1/4 tsp ​​Salt
  • 500 g ​​​Baby potatoes, boiled and peeled
  • 2 tbsp ​​​QBB GHEE
  • 2x3 cm pieces ​Cinnamon sticks​​​​
  • 8 ​​​Cardamoms
  • 5 ​​​Cloves
  • 2 ​​​Brown cardamoms
  • 2 ​​​Bay leaves
  • 1 ​​​Star anise
  • 500 g​​​ Basmati rice, washed, soaked for 20 minutes and drained
  • 100 ml ​​Natural yoghurt
  • 1 tbsp ​​​Lime juice
  • 1 1/2 tsp ​​Salt
  • 1000 ml ​​Vegetable stock or water
  • 30 g ​​​Young ginger, julienned
  • 50 g ​​​Mint leaves​
  • 200 ml ​​Water with 1/2 tsp egg yellow colouring

Instructions
  1. Put the first 9 ingredients into a blender and blend till smooth.
  2. Combine the boiled potatoes and the blended ingredients together and leave aside.
  3. Put QBB Ghee, the whole spices, rice, yoghurt, lime juice, stock and salt a rice cooker or pot and boil till the rice is cooked. Remove the whole spices.
  4. Spread a third of the rice into a thick bottomed pan. Spread out half the chutney potatoes on the rice. Sprinkle some julienned ginger and mint leaves over it.
  5. Spread another third of the rice and repeat the rest of Step 4.
  6. Finally spread the last third of the cooked rice. Sprinkle with ginger and mint leaves. Pour the 200 ml water in.
  7. Place a moist clean cloth over the pot and then cover it. Cook on slow heat for 10 minutes, serve.


CHEF’S TIP:
Alternatively, you can just serve the potatoes by the side with the cooked rice. The potatoes are also nice on their own.
