Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.

Pan Grilled Cod Fish

Ingredients
FOR FISH
  • 2 codfish fillets, skin on
  • pinch of sea salt
  • pinch of black pepper
  • pinch of ground oregano
  • pinch of dried thyme leaves
  • pinch of fennel seeds
  • 1 tbsp Q.B.B Ghee


FOR CLARIFIED BUTTER AND SPICY TAMARIND SAUCE
  • 80 g white wine, optional
  • 1 bird’s eye chilli, diced
  • 1 shallot, diced
  • 80 ml chicken stock
  • 80 g cream
  • 30 g Q.B.B Ghee
  • 30 g tamarind juice
  • 10 g Thai chilli sauce
  • 3 stalks coriander, diced
  • pinch of salt
  • pinch of sugar
  • pinch of white pepper


FOR BUTTERED CONFIT CHERRY TOMATOES
  • 10 cherry tomatoes
  • 100 g Q.B.B Ghee
  • 1 sprig rosemary
  • 1 sprig thyme

Instructions
TO PREPARE CODFISH FILLETS
  1. Rub seasoning, herbs and spices into codfish fillets.
  2. Melt clarified butter on a hot pan; fry fillets until their skins are crispy, and the meat is just cooked through.
  3. Serve immediately with accompaniments.


TO PREPARE CLARIFIED BUTTER AND SPICY TAMARIND SAUCE
  1. Simmer chicken stock with chilli, shallots and white wine if using. Continue until liquid is reduced by half.
  2. Add cream and simmer gently until the mixture reaches a sauce-like consistency.
  3. Add Q.B.B ghee, tamarind juice, Thai chilli sauce and diced coriander. Stir until ghee has melted and the mixture is smooth and thick. Season with salt, sugar and white pepper.


TO MAKE BUTTERED CONFIT CHERRY TOMATOES
  1. Fully melt Q.B.B ghee in a pan.
  2. Add cherry tomatoes, rosemary and thyme.
  3. Simmer for 30 minutes on low heat.


To serve, place fish fillets on a plate and drizzle with sauce. Serve hot with confit cherry tomatoes.
