Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.

Orange and Sultana Cookies

  • 75 g Q.B.B ghee
  • 1 orange, zested
  • 45 g icing sugar, sifted
  • 3 tbsp semolina
  • 80 g plain flour
  • 40 g sultanas, soaked in Grand Marnier or orange juice and drained
  • 1/8 tsp baking powder

  1. Preheat oven to 180°C. Line a baking tray with parchment paper.
  2. Using an electric mixer, beat ghee, orange zest and sugar until well-combined.
  3. Stir in semolina and flour.
  4. Drop mixture by spoon onto baking trays and bake for 15 minutes.

    The recipe for this cookie is based on a classic Italian Lemon and yogurt cake; buttery and full of flavor from Q.B.B Ghee, as well as texture-rich from the use of semolina. It also bears the citrus warmth of orange zest and is made a little more luxurious by adding in sultanas soaked in Grand Marnier.
