Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.

Nasi Himpit

  • 2 cups ​White rice (washed and drained)
  • 4 cups ​Hot boiling water
  • 2 tsp ​Salt

  1. Cook rice in water with salt until rice is soft (make sure not to over-cook the rice).
  2. Drain out excess water.
  3. Line a layer of cling wrap over the container, transfer rice into container and compress it down with a piece of wet cloth (rice has to be firmly packed in the container).
  4. Next, use put some weight over the packed rice to flatten the surface. Cool overnight in refrigerator.
  5. When serving, simply pull out the cling film from the side and cut into 2 inches x 2 inches cubes.
  6. Serve with Sayur Lodeh, Kuah Kacang or Rendang.

    Traditionally, this dish is rolled and compressed in banana leaves, this recipe is a simplified version and can be easily duplicated in your home kitchen, all you really need is a clean square container and good quality cling wrap and of course the main ingredient – rice.
