Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.
Recipes

Dried Chilli Chicken

Ingredients
  • 400 g​​Chicken meat - diced into large pieces
  • 10 ​​Dried chili - seeded and cut into 1 cm length
  • 1 cup ​​Cashew nut, chopped
  • 3 sprigs ​Curry leaves
  • 1 ​​Onion - roughly diced
  • 2 tbsp ​​QBB GHEE
  • 1/2 cup ​Water
  • 1 tsp ​​Cornstarch

    SAUCE
  • 1 tbsp ​​Thick soya sauce
  • 1/2 tbsp ​L&P sauce
  • 1 tbsp ​​Oyster sauce
  • Sugar to taste

Instructions
  1. Marinate chicken with sauce ingredients for 30 minutes.
  2. Heat QBB GHEE and fry marinated chicken.
  3. Add water mixed with corn flour, simmer and stir well.
  4. Add dried chili, cashew nut and curry leaves. Simmer and serve.

    SERVING: 6 PERSONS
    PREPARATION TIME: 20 MINUTES
