Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.
Recipes

Cumin Ghee Rice

Ingredients
  • 1 tbsp heaped Q.B.B Ghee
  • 1 bay leaf
  • 3 inch cinnamon stick
  • cardamom pod, split
  • 4 cloves
  • 1 tbsp cumin seeds
  • 1 cup Basmathi rice salt for seasoning
  • 2 cups water

Instructions
  1. Soak rice in water for half an hour.
  2. In a heavy-bottomed pan, melt ghee over low heat.
  3. Add in bay leaf, followed by cinnamon stick, cloves, cardamom and cumin seeds. Sauté for about a minute, ensuring the spices do not burn.
  4. Toss in the rice and stir for another minute.
  5. Add two cups of water and season to taste with salt.
  6. Cook over low flame until the liquid has evaporated. Remove the pot from heat, and keep aside with the lid on for another 5 minutes.
  7. Fluff up the cooked rice with a fork, to ensure it does not clump up.
