Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.

QBB Carbonara Seafood

Ingredients
  • 3 tsp QBB Ghee
  • 2 tbsp garlic, chopped
  • 2 onion, diced
  • 1 tbsp, dried oregano
  • 1 tbsp, chilli flakes
  • Salt to taste
  • 500 gm boiled pasta
  • 2 cups zucchini ( green and yellow )
  • 2 cup brinjal
  • 200 gm squids
  • 200 gm prawns
  • 350 gm claims
  • 1 tsp concentrated chicken stock
  • 2 ½ tsp sugar
  • 1 ½ tsp salt
  • 1 cup fresh milk
  • 2 tbsp wheat flour

Instructions
  1. Heat QBB Ghee and sauté garlic, onion and oregano in a pan over low heat.
  2. Add flour and fry until you get a sandy texture.
  3. Add fresh milk and stir constanly make sure it does not become lumpy.Add salt to taste.
  4. When the sauce is thickened, add squids, prawns and claims,stir briskly until cook.
  5. Add in the pasta and stir fry quickly to make it hot with simmer fire.
  6. Serve immediately and garnish with chopped parsley leaves.
