Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.

  • 500g milk chocolate
  • 500g dark chocolate
  • 100g QBB
  • 200g assorted coloured marshmallows, cut into smaller pieces
  • 120g shortbread biscuits, chopped into bite sized pieces
  • 140g roasted macadamia nuts or hazelnuts
  • 60g raisins or cranberries or both
  • 60g assorted rock candies crushed or mini M&Ms

  1. Line a 1.5 cm-deep, 30cm x 25cm bar pan with non-stick paper. Place the two types of chocolates with the QBB in a heatproof bowl over a pan of simmering water (don't let the bowl touch the water), then stir until melted.
  2. Stir remaining ingredients into it.
  3. Spread into the prepared pan, chill in fridge for two hours or until hard.
  4. Slice in the pan and refrigerate until ready to serve.
