Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.

Spicy Cheese Stick

Prep: 15 mins
Cook: 20 mins
Serves: 5

  • 300g plain flour
  • 1 teaspoon fine salt
  • 200g strong cheddar cheese, grated
  • 2 teaspoons black peppercorns, coarsely pounded
  • 1½ teaspoons cumin seeds or oregano, crushed lightly
  • 125g QBB
  • 3 tablespoons cold water

  1. Preheat oven to 180°C.
  2. Sift flour and salt together into a mixing bowl.
  3. Combine the rest of the ingredients into the flour except for the water. Rub in until you get loose dough.
  4. Add the water and knead to form soft pliable dough.
  5. Roll out the dough into 0.5cm thickness and cut it into strips. Place the strips on a greased baking sheet.
  6. Bake for 20 minutes or until golden brown.

TIP: For fancier cookies, push the dough into a cookie press and press it out on to the baking sheet. Or sprinkle some black sesame seeds on the strips.
