Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.

Lemon Slices

Serves: 6

  • 200g self raising flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 250ml natural yogurt
  • 180g caster sugar
  • 3 (180g) large eggs
  • Zest of 2 lemons
  • 1 teaspoon vanilla extract
  • 125ml melted QBB
  • 3 tablespoons marmalade

  1. Preheat oven to 180°C.
  2. Line a loaf tin with non-stick paper or several cup cake molds.
  3. Sift flour, baking powder, and salt into mixing bowl.
  4. Combine yogurt, sugar, eggs, lemon zest, and vanilla extract in a large bowl and whisk until well blended.
  5. Gradually whisk in dry ingredients. Using spatula, fold in melted QBB.
  6. Transfer batter to prepared pan and place in a preheated oven.
  7. Bake for 40 minutes or until a skewer inserted into centre comes out clean.
  8. Cool cake in pan for 5 minutes and then turn cake on rack to cool
  9. Brush marmalade over top of cake. Cool cake thoroughly before cutting.
