Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.

Pineapple Tarts

Pastry Ingredients
  • 250g QBB
  • 50g Icing Sugar
  • 2 Egg Yolks
  • 1/4 tsp Salt
  • 350g Flour
  • 50g Corn Four

Filling Jam
  • 500g Grated Pineapple
  • 250g Sugar
  • 1/2pc Cinnamon Stick

  1. Put pineapple and cinnamon stick to cook then add in sugar.
  2. Cream QBB and sugar together then add in eggs and fold in flour and mix well
  3. Leave in the fridge for 1/2 hr.
  4. Use a cutter to cut out the shape then put the jam on top.
  5. Bake for 25 min at 170°C
