Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.

Yam And Corn Dessert

  • 500 g yam, peeled, sliced and steamed
  • 3 cups thin coconut milk
  • 4 pandan leaves, tied into a knot
  • 80 g sugar or more
  • 1/4 teaspoon salt
  • 1 can whole sweet corn or gingko nuts, drained
  • 1 tablespoon QBB
  • 1 cup thick coconut milk

  1. Put thin coconut milk and mashed yam into blender and blend till smooth.
  2. Put blended yam, salt, sugar and pandan into a pot and bring to boil for about 5 minutes.
  3. Add the thick coconut milk and QBB to the boiling yam together with the sweet corn.
  4. Boil for about 3 minutes. Serve warm or cold.
