Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.

Olive & Basil Fried Rice

  • 1 tablespoon QBB
  • 6 chilli padies, sliced
  • 4 cloves garlic, finely chopped
  • 10 shallots, sliced
  • 200 g peeled prawns or mock char siew
  • handful of sweet basil leaves
  • 60 g chopped black olives
  • 3-4 tablespoons fish sauce or light soy sauce
  • 750 g cooked rice

  1. Heat QBB and add in the chopped chillies, garlics and shallots and saute for about 1 minute
  2. Add in the prawns or char siew and saute for 3 minutes or until prawns turn pink.
  3. Add in the rest of the ingredients and stir fry over high heat till well mixed.
  4. Serve with the following condiments:

  1. 100 g unripe mangoes, diced
  2. 30 g spring onion, chopped (optional)
  3. 1 tablespoon fried onion
