Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.

Mediterranean Seafood Pasta

  • 1 1/2 tablespoons QBB
  • 4 cloves garlic, finely minced
  • 1 large onion, finely chopped
  • 1 1/2 tablespoons flour
  • 400 ml low fat milk
  • 1 teaspoon salt
  • freshly ground black pepper
  • 300 g prawns, with shells intact
  • 300 g salmon, cubed
  • 200 g squids, cut into thin rings
  • 150 g grated Parmesan cheese
  • 200 ml light sour cream
  • 2 tablespoons finely chopped dill
  • 350 g fettuccine or pasta of your choice, uncooked

  1. Heat QBB in a saucepan over low heat.
  2. Add garlic and onion and cook for 1 minute.
  3. Add flour, stirring constantly.
  4. Gradually stir in milk and cook, stirring constantly, until thickened.
  5. Add salt, pepper and the seafood and cook till the seafood is done.
  6. Add Parmesan cheese and sour cream; cook and stir until cheese melts. Stir in dill. Set aside and keep warm.
  7. Cook fettuccine according to package directions; drain. Add in the prepared ingredients and toss well.
