Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.
Recipes

Lamb Burger

Ingredients
  • 750 g minced lamb
  • 1 1/2 tablespoons meat curry powder
  • 50 g golden breadcrumbs
  • 1 teaspoon salt freshly ground black pepper
  • 8 cloves garlic, minced QBB for brushing



YOGHURT SAUCE
  • 200 g Greek yoghurt
  • zest of 1 lemon
  • 1/2 teaspoon salt

Instructions
  1. Preheat the grill.
  2. Combine all ingredients in a mixing bowl and work together until they are fully incorporated.
  3. Using your hands, flatten burgers to about 1 cm thick and 5-6 cm diameter.
  4. Heat a grill with QBB and place the shaped burgers on the grill and cook, about 2 to 3 minutes per side or until fully cooked through.
  5. Cooking time varies based on how hot your grill is or how thick your burger is.
  6. Place the cooked lamb burgers on top of the cut and toasted bun and add a piece of lettuce and a tomato slice. Top with a dollop of the yogurt sauce and serve.



TO PREPARE YOGHURT SAUCE
  1. In a medium mixing bowl, stir together the yogurt and lemon zest and juice.
  2. Season, to taste, with a couple pinches of salt. Sauce can be made ahead of time and refrigerated until ready to use.
  3. Bring to room temperature before using.



TO SERVE THE BURGERS
  1. Burgers buns, brushed with melted QBB
  2. 1 small head red leaf lettuce, washed, dried, trimmed and torn into small pieces
  3. 4 ripe plum tomatoes, cut into 1/2 cm thick rounds



NOTE
  1. Toast the buns before using.
