Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.
Recipes

Ayam DJAKARTA

Ingredients
  • 4 red chillies
  • 4 cloves garlic
  • 10 shallots
  • 2 cm ginger
  • 3 ripe tomatoes, seeded
  • 2 stalks lemon grass
  • 3 cm galangal
  • 1 1/2 teaspoons fennel seeds
  • 1 teaspoon turmeric powder
  • 3 tablespoons coconut cream
  • 1 tablespoon sweet soya sauce
  • 1 teaspoon salt
  • 4 kaffir lime leaves, shredded finely
  • 1 tablespoon QBB
  • 2 chicken breasts, boned and cubed

Instructions
  1. Blend the first 12 ingredients in a blender until smooth.
  2. Marinate the chicken pieces and the shredded lime leaves in the prepared marinade for 2 hours or more.
  3. Heat QBB and add in the marinated chicken pieces and stir fry till the chicken pieces are cooked and the gravy thick.
