Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.
Recipes

Strawberry Or Raspberry Tiramisu

Ingredients
  • 80 g ginger snap biscuits
  • 50 g QBB, melted
  • 100 ml orange juice
  • 1 tablespoon gelatin
  • 250 g plain cream cheese, room temperature
  • 100 g caster sugar
  • 200 ml milk
  • finely grated rind of 1 lemon
  • 2 tablespoons lemon juice
  • 400 g strawberries, halved or quartered

Instructions
  1. Put ginger snaps into a plastic bag and crush till it becomes fine crumbs.
  2. Add in the QBB and combine well.
  3. Press about 1 tablespoon of this into the base of dessert bowls or glasses. Keep refrigerated.
  4. Heat orange juice and dissolve the gelatin in it.
  5. Pour into a blender. Put in the cream cheese, sugar and milk and lemon juice and blend till smooth.
  6. Stir in the grated lemon rind.
  7. Pour some of the prepared cheese mixture on top of the biscuit crumbs. Sprinkle with some chopped strawberries followed by more cheese mixture and strawberries.
  8. Finally sprinkle with some of the balance of the biscuit crumbs.
  9. Keep chilled.



Note: can pour some chocolate sauce on top if desired.
