Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.

Hazelnut Crescent Cookies

Ingredients
  • 220 g QBB, room temperature
  • 140 g caster sugar
  • 1 teaspoon instant coffee
  • 220 g plain flour, sifted
  • a pinch of salt
  • 120 g ground hazelnuts
  • some icing sugar for dusting

Instructions
  1. Cream QBB, sugar and instant coffee till light and creamy.
  2. Add in the rest of the ingredients except the last and knead to form a soft dough. If possible refrigerate the dough for 1/2 hour.
  3. Either roll out the dough to 1 cm thickness and cut with a crescent shape cutter or pinch dough and shape into crescents.
  4. Place on baking sheet lined with non-stick paper and bake at 180 ° C for 20-25 minutes.
  5. Place on wire rack to cool and when it is cool, dust with icing sugar.
