Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.
Recipes

Potato Strudel with Cilantro Sauce

Ingredients
  • 2 tablespoons QBB
  • 2 cloves garlic, minced
  • 1 onion, chopped finely
  • 30g plain flour
  • 500ml full cream milk
  • 3 medium potatoes, boiled and cut into 1 cm cubes
  • 200g button mushrooms, quartered
  • 200g shake mushrooms, quartered
  • 1 tablespoon chopped fresh oregano leaves or 1/2 teaspoon dried oregano
  • 1 tablespoon chopped fresh thyme leaves or 1/2 teaspoon dried thyme
  • 1 tablespoon chopped fresh parsley or 1/2 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 150g mozzarella or cheddar cheese, grated
  • 4 sheets of rolled puff pastry (can be bought from supermarket)
  • 2 tablespoons QBB


Cilantro Sauce
  • 100g coriander leaves
  • 30g spring onion
  • 1cm ginger
  • 1 green chilli
  • 1 tablespoon melted QBB
  • 4 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1/2 teaspoon sugar

Instructions
  1. Heat QBB and saute the chopped garlic and onion until aromatic.
  2. Add in the flour and cook stirring constantly until bubbly.
  3. Gradually pour in the milk, stirring vigourously to make sure there are no lumps.
  4. Add in the boiled potatoes, mushrooms, herbs, salt and pepper. Stir to mix well and turn off heat. Stir in the grated cheese.
  5. Spread some QBB on the puff pastry.
  6. Place a quarter of the cooked mixture on one side of the rolled puff pastry.
  7. Roll up and place on greased baking tray.
  8. Crimp the edges with a fork if desired.
  9. Bake in preheated oven of 200�C for 25 - 30min
  10. Serve with Cilantro Sauce or spread Cilantro Sauce on the pastry before placing the cooked vegetables on it


Cilantro Sauce
Place the ingredients into a blender and blend till smooth.
