Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.

Garlic Crabs

  • 4 tablespoons melted QBB
  • 6 cloves garlic, minced
  • 2 chilli padies, chopped
  • 5 shallots, chopped
  • 400ml chicken stock
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 tablespoons oyster sauce
  • 3 medium rock crabs, cleaned and cut up
  • 1 tablespoon cornflour to be mixed with 3 tablespoons water

  1. Heat QBB.
  2. Saute the chopped garlic, chillies and shallots until aromatic.
  3. Add in the chicken stock and the rest of the ingredients.
  4. Cook, stirring occasionally until the crabs are cooked.
  5. Thicken with cornflour solution. Serve immediately.
