Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.

Eggless Apple Pasties

Ingredients
Makes 8 pasties

  • 2 red apples, skin, core and chop finely
  • 40g caster sugar
  • 80ml water
  • 2cm piece cinnamon stick
  • 1 tbsp lemon juice
  • 1/2 tbsp QBB
  • 1 tsp plain flour, to thicken

    Pastry ingredients:
  • 200g plain flour
  • 6g caster sugar
  • Pinch of salt
  • 200g chilled QBB
  • 5 tbsps ice-cold water mixed with 1 tsp lemon juice
  • Milk for glazing

Instructions
To make the filling:
  1. Cook apples in a heavy-based saucepan. with water, sugar, cinnamon stick, lemon juice and QBB.
  2. Simmer until apples turn soft. Stir in the flour to thicken it.

    To make the pastry:
  3. Sift flour into a mixing bowl, add sugar and salt to combine.
  4. Add QBB and, using your fingertips, quickly and lightly rub the QBB until mixture resembles fine breadcrumbs.
  5. Make a well in the centre of the flour mixture, stir in water and lemon juice and work together until a fairly stiff dough is formed.
  6. Form the pastry into a ball. If it is slightly sticky, add a little more flour. Wrap the pastry with cling film and chill in the refrigerator for at least 30 minutes before using.
  7. Roll out the pastry on a pastry board to 1/4 cm thick. Cut into circles about 3-4 cm in diameter.
  8. Place 2 teaspoons of the prepared apple filling in the centre of a pastry circle. Cover with another circle and using a fork, crimp the edges. Repeat procedure with the remaining pastry.
  9. Brush the top of the pastry with milk.
  10. Bake in a preheated oven of 200�C for 25 minutes.
