Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.

Cream of Spinach Soup with Cheesy Bread

  • 750 g spinach, chopped
  • 750 ml chicken or vegetable stock
  • 1 large onion, sliced
  • 5 cloves garlic, chopped
  • 1 green chillie, chopped
  • 2 tablespoons QBB Pure Ghee
  • 45 g plain flour
  • 500 ml full cream or low fat milk
  • 1 1/4 teaspoon salt
  • 1 tablespoon QBB
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds

Cheesy Bread Toasts
  • 2 tablespoons QBB
  • 1/2 teaspoon salt
  • 3 cloves garlic, pounded
  • 1/2 teaspoon black peppercorns, coarsely pounded
  • 1 large French loaf
  • 150 grated cheddar cheese

  1. Place spinach, stock, onion, garlic and chillie into a pan and boil till the spinach is cooked.
  2. Remove from heat and cool it thoroughly.
  3. Place the cooked spinach and the liquid into a blender and blend till smooth.
  4. Heat QBB Pure Ghee and stir in the flour and cook until bubbly, making sure it does not get burnt.
  5. Gradually add in the milk stirring constantly to make sure there are no lumps.
  6. Pour in the blended spinach and add in the salt. Bring to a boil and turn off heat.
  7. Heat the QBB in a separate pan and fry the mustard seeds and cumin seeds until aromatic. Transfer to the boiled soup and stir to combine well.
  8. Serve hot with the Peppered Garlic Bread or with a dazzle of cream or evaporated milk.

Cheesy Bread Toasts
  1. Combine the first 4 ingredients together in a small bowl.
  2. Slice the bread and spread the above on it.
  3. Toast it in a hot oven for 10 minutes and then sprinkle with the grated cheese and toast it further till the cheese melts.
  4. Serve with soup.
