Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.

Corn Pancakes with Tomato Salsa

  • 3 shallots, chopped finely
  • 2 cloves garlic, minced finely
  • 1 green chilli, sliced thinly
  • 4 stalks spring onions, finely chopped
  • 250g wholemeal flour
  • 70g plain flour, sifted
  • 200g whole kernel corn, chopped
  • 50g whole kernel corn, left whole
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 2 tablespoons QBB
  • 400ml milk or water

Chilli Tomato Salsa
  • 2 Large tomatoes, chopped finely
  • 4 shallots, chopped finely
  • 1 clove garlic, finely minced
  • 2 tablespoons finely chopped fresh basil or 1 teaspoon dried basil
  • 2 green chillies, finely chopped
  • 1/2 teaspoon salt
  • 2 teaspoons QBB
  • 3 tablespoons lime or lemon juice

  1. Place all the above ingredients into a mixing bowl and combine well to form a thick batter.
  2. Leave aside for 1/2 hour.
  3. Grease a frying pan with melted QBB.
  4. Pour one or two ladleful of the batter and spread out to make a thick pancake. Cook on both side till golden brown.
  5. Serve with Chilli Tomato Salsa

  1. Combine the ingredients and serve with pancake
