Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.

Chocolate Marshmallow Balls

  • 160 g QBB
  • 30 g cocoa, sifted
  • 120 g brown sugar
  • 1 can sweetened condensed milk
  • 1 1/2 tsps vanilla essence
  • 280 g plain sweet biscuits, finely crushed (preferably Marie biscuits)
  • 15 mini marshmallows
  • Desiccated coconut

  1. Heat QBB, cocoa, sugar and sweetened condensed milk in a medium saucepan, stirring constantly, until ghee and sugar just melt and mixture is smooth.
  2. Remove from heat and stir in vanilla essence and biscuit crumbs.
  3. Mix thoroughly and leave until mixture is cool enough to shape.
  4. With wet hands, shape a spoonful of mixture around each piece of marshmallow to form a ball. Roll in coconut.
  5. Place into small paper cases and refrigerate until firm. Store in a covered container in the fridge until ready to serve.
