Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.

Chicken Satay & Sauce

Ingredients
Chicken Satay
  • 4 cm ginger
  • 3 cm galangal
  • 2 stalks lemon grass
  • 2 teaspoons fennel
  • 150 ml coconut cream
  • 6 tablespoons sugar
  • 1 tablespoon meat curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon salt or more
  • 500 g chicken breast or thigh, cut into cubes or strips
  • QBB for basting
  • wooden skewers
  • cucumber and onion slices
  • ketupat pieces


Gravy
  • 140 g chilli paste
  • 2 teaspoons shrimp paste
  • 2 cm ginger
  • 100 ml water
  • 3 tablespoons QBB
  • 2 stalks lemon grass, bruised
  • 2 kaffir lime leaves, torn
  • 8 tablespoons sugar
  • 500 ml water
  • 2 tablespoons lime juice
  • 1/2 teaspoon salt
  • 150 ml thick coconut milk
  • 500 g roasted and pounded peanuts

Instructions
Chicken Satay
  1. Blend ginger, galangal, lemon grass, fennel and coconut cream together until smooth.
  2. Place in a mixing bowl. Add in the sugar, curry powder, turmeric powder and salt and mix well.
  3. Put in the chicken pieces, combine well and leave to marinate for 5 hours or more in the refrigerator.
  4. Thread a few chicken pieces into the wooden skewers.
  5. Grill the satay, basting it occasionally with QBB.
  6. Alternatively, deep fry the satay and drain on absorbent paper.
  7. Serve with satay sauce, cucumber slices and ketupat.


Gravy
  1. Blend chilli paste, shrimp paste, ginger and 100 ml of water till smooth.
  2. Heat QBB and fry the blended ingredients and the lemon grass until oil separates.
  3. Add in the rest of the ingredients and bring to boil. Serve with satay.

Cooking time: 20 minutes
