Clarified butter is without the lactose and other milk solids. It is traditionally prepared by gently heating butter until it becomes a clear golden liquid. The lactose and other milk solids coagulate and are meticulously removed. This process also evaporates most of the natural water content, making the clarified butter light, pure and resistant to spoilage.

Banana Bread with Chocolate Glaze

  • 110g QBB at room temperature
  • 220g caster sugar
  • 2 medium eggs
  • 270g mashed ripe bananas
  • 240g plain flour, sifted
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 100g chopped walnuts
  • 200g cooking chocolate
  • 1 tablespoon QBB
  • Walnuts for garnishing

  1. Cream QBB and sugar together until pale and thick. Add one egg at a time, beating till smooth.
  2. Blend in mashed bananas.
  3. In second bowl, stir flour with baking soda, baking powder, salt and walnuts.
  4. Add to banana mixture stirring lightly only.
  5. Transfer to greased loaf pan. Bake in 180°C oven for about 1 hour until inserted toothpick comes out clean. Let it stand for 10min.
  6. Remove from pan and place on cake rack to cool.
  7. Mix melted chocolate and QBB together and pour over the cooled cake. Sprinkle with chopped walnuts on top.
